The rapid, early phase of non-PPO darkening was strongly correlated with, and predicted by, protein content... Non-PPO darkening can be measured with small-scale methods suited to processing large numbers of samples and a major component of this darkening can be predicted simply from grain or flour protein content... Stage 1, an initial rapid darkening in the first two hours, Stage 2 an intermediate stage lasting a further 2 hours during which the rate of darkening slowed, and Stage 3 - lasting for the remainder of the experimental time period and beyond in which darkening was slower but linear over time...

Low protein in cereal grains is indicative of poor nitrogen supply to the grain during the grain fill period... When grain protein in cereal crop is below a critical range it is strong evidence that yield for that season may have been restricted by nitrogen more so than moisture... The rate of nitrogen fertiliser applied is an attempt to bridge the gap between the nitrogen a soil can supply (mineralisation plus residual mineral-N minus denitrification), the crop demand for the season, and the efficiency of the crop accessing and transferring soil and fertiliser N to grain (Figure 2)...

The project focused on colour stability (darkening) of Asian noodles and has provided strategies for improvement of Australian wheat varieties and better management of quality of grain shipments going to high value markets... Significant research is still required to understand the genetic and environmental control of constituents that determine the creamy to yellow colour of noodles and pasta variation that can occur along the production to use chain... Darkening in noodles measured as a loss in brightness (CIE L*) was separated into two main time periods, 0-4hours and 4-24hours...

Dual purpose canola would provide an excellent break crop for winter cereals in the high rainfall zone, and potentially improve the profitability and flexibility of mixed farming operations... The final biomass and yield of the canola in the grazed and un-grazed areas was measured from two hand harvested quadrats (1.08 m x 0.4 m) taken at physiological maturity in each plot and oil content measured using NMR. Starch availability was positively related to waxy endosperm, large seed size, ss-kafirin proportion, and starch content, but negatively related to protein content, nitrogen to sulfur (N/S) ratio, phytate-P, tannin content, and seed colour... Yellow lupins (YLs) have higher protein content and quality than narrow-leafed lupins (NLLs)... A conservative estimate from commercial marketers suggests that whole yellow lupins should receive in the order of $50/tonne premium over narrow-leafed lupins... The desired outcome of this project was to develop agronomically superior varieties of YL, primarily for WA but with potential for other parts of Australia, to meet the strong demand of premium markets for the nutritionally superior grain...
