Working in CSIRO's Food Futures Flagship, Mr Wang has adapted CT scanning methods (computerised x-ray micro-tomography) normally used to determine the porosity and permeability of rocks in oil exploration research to better understand how dough structure affects bread quality... Using the x-ray technique, Mr Wang has generated three-dimensional maps of the pore structure, or air spaces, inside dough and bread made from flour with low and high protein... "I found that the gold-standard breads made from commercial bread flour used in South-East Asia had a high pore space, or porosity, with 99.9 per cent of pores forming one big interconnecting pore space and a tiny proportion existing as closed pores within the solid bread," Mr Wang says...
