Mount Zero co-owner Richard Seymour says the company "looks at integrity, quality and flavour rather than ease of production"... In addition to farro, which Richard says the Italians also colloquially call 'spelt', the Mount Zero stable includes quinoa (grown by Kindred Organics), lentils and chickpeas for niche consumer and restaurant markets... The company sources up to 15t of farro each year from grower Damien Maher, from Warracknabeal, Victoria, who made the transition to biodynamic farming in 1988 and planted the ancient grain seven years ago "because it predates superphosphate and chemicals, and is tougher than other grains"...
