In 2008, earthy, musty off-flavours were detected in peanuts in north Queensland, which led to over $1 million of product downgrades... The actinomycetes produce volatile compounds that contaminate the stored nuts, and cause the musty, earthy off-flavours... Contamination of peanuts can occur in the field during the growing season and also during post-harvest storage and handling...
